VEGETARIAN HAMBURGER

This healthy, tasty roll is even nicer accompanied by a glass of fragrant, chilled Corvo Bianco.

Ingredients:

– Hamburger rolls
– 70 gr Natural tofu
– 100 gr Spinach
– Breadcrumbs
– 1 Tomato
– Salt an pepper
– Olive oil
– Mayonnaise

 

Step 1 – Wash and boil the spinach (or wilt it in a pan), drain very well and chop finely. In a bowl, break up the tofu and mash with a fork. Add the tofu to the spinach, mix well and season with salt and pepper to taste. Add some breadcrumbs, which will help give consistency to the mixture, and form into hamburgers.

 

Step 2 – Place the hamburgers on a baking tray lined with baking paper brushed with oil. Cook the hamburgers in the oven pre-heated to 180° until browned, turning them half-way through cooking to brown both sides.

 

Step 3 – Wash and slice the tomato, and lightly toast the bread. Place the hamburger on the bread which has been spread with a film of mayonnaise and add a slice of tomato.

 

Step 4 – This healthy, tasty roll is even nicer accompanied by a glass of fragrant, chilled Corvo Bianco. Finish with a couple of juicy prickly pears and there you have a light lunch with no guilt feelings!  Bon appétit!
